Moradin is the creator of the Dwarven Race. He wants his children to survive. As the Dwarven Defender is the ultimate Dwarven Warrior PRC, it makes sense that Moradin's role (as an LG God) is more defensive (Protection) than offensive(War).
As a Cleric of Moradin, I'd take Good and Earth as my domains. Good gives you access to Holy Smite (wands of Holy Smite!!!) and Earth gives you access to Stone Skin. There are many other useful spells in those two domains, but Holy Smite and Stone Skin are awesome.
